My mother made this for me as my wedding cake! It's one of my favorites. I hope you'll enjoy it as much as I do. Ingredients:

2 c flour |
1 1/2 c granulated sugar |
2 eggs |
2 t baking soda |
1 can crushed pineapple (19 oz) |
icing |
i c coconut |
1 c brown sugar |
1/2 c melted butter |
6 t carnation milk |
Directions:
1. Preheat oven to 325F 2. Mixed first four ingredients until well blended 3. Then add the pineapple, mix well 4. Pour cake batter into a 9 x13 baking pan between 40 and 45 minutes 5. For icing, mix all ingredients but the coconut in a saucepan. 6. Bring to a boil for about 5 minutes 7. Let stand and cool 8. Add coconut, stir well 9. Lay on the cake 10. Enjoy! |
