As the dish bakes, the batter puffs up around the creamy ground beef filling. This recipe is also great with lean ground turkey breast. Ingredients:
1/2 lb lean ground beef |
1/2 cup onion, chopped |
1 (8 ounce) package reduced-fat cream cheese |
1/2 cup water |
1 (4 ounce) can green chilies, chopped |
1/2 teaspoon salt |
1 teaspoon chili powder |
1/2 teaspoon dried oregano leaves |
1/4 teaspoon ground cumin |
2 eggs, beaten |
3/4 cup unbleached all-purpose flour |
1/2 teaspoon salt |
3/4 cup reduced-fat milk |
1 tablespoon yellow cornmeal |
1/2 cup cheddar cheese, shredded |
1/2 cup fresh tomato, diced |
Directions:
1. Brown meat; add onion cook until tender, about 5 minutes. Add cream cheese and water; stir over low heat until cream cheese is melted. Stir in peppers, salt, chili powder, oregano and cumin. 2. In a medium-sized bowl, combine eggs, flour, salt and milk; beat until smooth. 3. Pour mixture into prepared pan. 4. Sprinkle with cornmeal; spoon meat mixture evenly over top. 5. Bake at 400° for 35 minutes. 6. Sprinkle with diced tomatoes and cheese. 7. Top each serving with sour cream, if desired. |
