Texas Beans in Twenty Minutes |

Yummy bean side dish that tastes great and cooks up fast! I got this from the Texas Beef Council, cuz ya know we raise cattle! :) BUT of course I had to play with it and change it up a little. I used turkey bacon in here but you can use any bacon you like, even fake bacon to make this vegetarian. Enjoy! Ingredients:
4 slices turkey bacon, chopped or 4 slices bacon or 4 slices soy bacon |
1 cup onion, finely chopped |
1/2 cup green bell pepper, finely chopped |
1 garlic clove, minced |
2 (15 1/2 ounce) cans pinto beans, rinsed, drained |
3/4 cup barbecue sauce |
1 -2 tablespoon brown sugar, packed |
Directions:
1. Spray a skillet really well with cooking spray (or add a little veg oil) and saute chopped turkey bacon* or soy bacon*, onion, bell pepper and garlic. Keep stirring so that it doesn't stick and everything gets cooked on all sides. About 3 to 5 minutes or until onion is tender. 2. Stir in remaining ingredients, cover and cook 5 minutes or until heated through, stirring occasionally. 3. Serve! 4. *Note: If you choose to use regular bacon cook it first and then drain and crumble. Pour off any grease from the pan leaving a tiny bit to saute the veggies. |
