Ingredients:
1 cup instant brown rice, uncooked |
vegetable cooking spray |
1 teaspoon vegetable oil |
1 cup chopped onion |
1 cup chopped green pepper |
2 (16-ounce) cans chili hot beans, undrained |
3/4 cup fat-free barbecue sauce |
1/4 cup brewed coffee |
Directions:
1. Cook rice according to package directions, omitting salt and fat. 2. Coat a large nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add onion and pepper; saute until tender. Add rice, beans, barbecue sauce, and coffee. Bring to a boil; reduce heat, and simmer, uncovered, 5 minutes or until thoroughly heated. |
