Good cupcakes Ingredients:
1/2 - cup butter or margarine, soft |
3/4 - cup sugar |
2 - eggs, lightly beaten |
1-2/2 - cups all-purpose flour |
2 - teaspoons baking powder |
1/4 - teaspoon baking soda |
1/4 - teaspoon salt |
1-1/2 - teaspoons ground cinnamon |
1/2 - teaspoon ground cloves |
1 - cup applesauce |
1 - cup currants |
Directions:
1. Preheat oven to 350°F. Line muffin cups with paper or grease. 2. In a large mixing bowl, beat butter and sugar until light. 3. Beat in eggs. 4. Sift together flour, baking powder, baking soda, salt, cinnamon, and cloves. 5. Add into your egg mixture. 6. Alternate your applesauce. You want to beat after each addition. 7. Stir in currants. 8. Now, you want to spoon batter into muffin cups. 9. Only fill 2/3's full. 10. Bake for 20 minutes or until center spring back when lightly pressed. 11. Cook in pan for 5 minutes before you remove to a rack to completely cooled. 12. Makes 18 cupcakes |
