Cheesy potato chunks flavored with green chilis, cumin & cilantro. Ingredients:
3lbs. unpeeled red potatoes, cut into chunks. |
6t. vegetable oil |
2pkgs. (1.25oz. each) cheese sauce mix (i use knorr brand) |
4.5oz. can chopped green chilis |
3t. dried minced onion |
1t. ground cumin |
1t. garlic powder |
1& 1/2t. salt |
3/4t. dried cilantro |
Directions:
1. Preheat oven to 450 degrees. 2. Place potatoes in large bowl. In a small bow whisk oil & cheese sauce mix until well blended. 3. Stir next 6 ingredients into cheese sauce mixture. 4. Pour mixture over potatoes & stir until well coated. 5. Spread potato mixture into a large jelly roll pan. 6. Bake 35 to 45 minutes or until potatoes are tender and golden brown. 7. Serve hot. |
