                                                1 lb dried black-eyed peas, sorted and rinsed  |  
                                                1 large white onion, diced  |  
                                                3 garlic cloves (minced or pressed)  |  
                                                1 bay leaf  |  
                                                12 ounces salt pork  |  
                                                2 (14 1/2 ounce) cans low sodium chicken broth  |  
                                                2 cups water  |  
                                                
                     
                    Directions:
