Tex Mex Squash N Zuchini Casserole |

This is from my friend Carrie! Great when the summer veggies are in! I throw some chopped tomato on top! Ingredients:
2 small yellow squash, sliced |
2 small zucchini, sliced |
1 medium onion, sliced |
1 teaspoon garlic, minced |
2 tablespoons oil |
4 ounces green chilies, chopped |
2 cups yellow corn |
1/2 cup cheddar, grated |
1/2 cup monterey jack, grated |
1 teaspoon cumin |
***1 ripe red tomato, chopped |
Directions:
1. Lightly saute the squash, zucchini, onion, and garlic until 2. just soft. 3. Toss with the remaining ingredients. 4. Place in a lightly oiled 2-quart casserole dish. 5. Bake at 400 for 20 minutes. 6. Top with chopped tomato before serving if desired 7. Serve warm with grilled chicken or pork. |
