Found this in an old church cookbook. Easy and quick pork or chicken dinner. Good served over rice. Ingredients:
1 -1 1/2 lb boneless pork or 1 -1 1/2 lb boneless chicken breast |
1 (1 1/4 ounce) package taco seasoning mix |
1 tablespoon oil (i use canola oil ) |
2/3 cup peach preserves (sugar free if desirsed ) |
1 (16 ounce) bottle chunky style salsa (mild or hot depending on your taste ) |
Directions:
1. Cut meat into 3/4 inch pieces and place in zip loc bag. Pour taco seasoning in and coat meat well with seasoning. 2. Heat oil in a large skillet over medium high heat and brown meat, stirring occasionaly. 3. Add salsa and peach preserves to skillet. Stir well and lower heat, cover and simmer for 15 to 20 minutes. |
