TEX MEX MELTDOWN I obtained this recipe from Sammy Hagar’s Cabo Wabo Cantina in Lake Tahoe, Nevada. What a fun place to visit. Delicious food and great atmosphere. I will go back.
Ingredients:
1 medium jalapeno pepper seeded and chopped
1/2 green bell pepper coarsely chopped
1/4 cup white onion coarsely chopped
1 can black beans drained and rinsed
1 can tomato diced with juice
1/2 cup frozen corn
2 limes juiced
1 tablespoon olive oil
2 tablespoons chopped cilantro minced
1/2 teaspoon freshly ground black pepper
1/2 teaspoon cumin
1/2 teaspoon red pepper flakes
1/4 cup tequila
4 tablespoons fresh lime juice
Directions:
1. Heat olive oil in sauté pan over medium high heat.
2. Add bell peppers and onion stirring occasionally and cook 4 minutes until tender.
3. Stir in beans, tomatoes with juice, jalapeno, corn, pepper, cumin, red pepper flakes and cilantro.
4. Cook 4 minutes then stir in tequila and lime juice then serve.
