TEX MEX MELTDOWN I obtained this recipe from Sammy Hagar’s Cabo Wabo Cantina in Lake Tahoe, Nevada. What a fun place to visit. Delicious food and great atmosphere. I will go back. Ingredients:
1 medium jalapeno pepper seeded and chopped |
1/2 green bell pepper coarsely chopped |
1/4 cup white onion coarsely chopped |
1 can black beans drained and rinsed |
1 can tomato diced with juice |
1/2 cup frozen corn |
2 limes juiced |
1 tablespoon olive oil |
2 tablespoons chopped cilantro minced |
1/2 teaspoon freshly ground black pepper |
1/2 teaspoon cumin |
1/2 teaspoon red pepper flakes |
1/4 cup tequila |
4 tablespoons fresh lime juice |
Directions:
1. Heat olive oil in sauté pan over medium high heat. 2. Add bell peppers and onion stirring occasionally and cook 4 minutes until tender. 3. Stir in beans, tomatoes with juice, jalapeno, corn, pepper, cumin, red pepper flakes and cilantro. 4. Cook 4 minutes then stir in tequila and lime juice then serve. |
