This is a recipe I've had for years. Since my husband likes my traditional meatloaf I haven't made it in years. Ingredients:
1 1/2 lbs ground meat |
1 1/2 cups cheddar cheese, grated |
1 cup tomato juice |
1/2 cup onion, chopped |
1 (4 ounce) can green chili peppers, chopped (mild or medium) |
4 cups corn chips |
1 egg |
2 garlic cloves, chopped |
2 tablespoons chili powder |
1 teaspoon salt |
1/2 teaspoon pepper |
sliced olive |
Directions:
1. Preheat oven at 350 degrees. In large bowl combine meat and 1 cup cheese, tomato juice, chili powder, egg, garlic and seasonings. 2. Stir in 2 cups crushed chips. 3. Bake 40-45 minutes at 375. 4. Remove and top with cheese and remaining chips. Add olives. |
