This is my origional recipe. It is so good, you'll be lucky if there is any left over for sandwiches! My Grandma always requested this for get togethers. After she passed away, I decided to write a cookbook in her honor. This is in there. You can get more info Ingredients:
2 lbs ground beef |
4 eggs |
1 tablespoon salt |
3/4 cup quick oats |
1 cup chunky salsa |
3/4 cup ketchup |
1/4 teaspoon cumin |
1/4 teaspoon chili powder |
1 bell pepper, sliced into rings |
Directions:
1. Preheat oven to 375. 2. In a small bowl mix ketchup, cumin, and chilli powder. 3. Set aside. 4. Next, mix beef, salt, oats, salsa, and eggs. 5. Place mixture in a large glass baking dish. 6. Form into a loaf. 7. Spread ketchup mixture on top of meatloaf. 8. Bake on middle rack for 45 minutes. 9. Remove from oven and place pepper rings on top. 10. Return to oven and cook for 15 minutes more. 11. Let rest for 5 minutes. 12. Makes great sandwiches. |
