I LOVE black beans. This is my favorite black bean dish. It tastes best if you season the chicken lightly with fajita seasoning and cook on a charcoal grill before slicing into strips. This is a tasty dish and it looks so colorful and gorgeous on the plate. I hope you enjoy this as much as I do. It works great with warm tortillas and guacamole. YUM! Ingredients:
12 ounces black beans, rinsed and drained (canned) |
12 ounces whole kernel corn, drained (canned) |
1 large lemon, juice and zest of |
2 tablespoons extra virgin olive oil |
12 ounces rotel tomatoes, drained |
1 -2 tablespoon fresh cilantro, chopped |
1 lb chicken breast, cooked and cut into strips |
2 green onions, chopped |
2 cups cooked rice |
salt and pepper |
Directions:
1. Mix black beans, corn, lemon juice and zest, olive oil, rotel tomatoes, cilantro, salt and pepper in medium bowl. Cover and refrigerate 30 minutes. 2. Layer plate with rice, then grilled chicken. 3. Top with black bean mixture and chives. |
