TEX MEX GREEN BEAN SALAD DATED 1986 This is a recipe my catering buddy and I concocted when we were asked to do a bridal shower with nothing but salads. The bride and her mother loved green beans and spicy, so we came up with this concoction. Read more . Hope you like it. Ingredients:
1 pound fresh green beans |
1 teaspoon salt |
2 tablespoons olive oil |
2 tablespoons lemon juice |
2 tablespoons sliced green onions |
1/4 teaspoon pepper |
1/4 teaspoon ground cumin |
lettuce leaves |
shredded cheddar or pepper jack cheese |
Directions:
1. Place beans and salt in a saucepan then add a small amount of water. 2. Cover and cook for 7 minutes then rinse in cold water and drain. 3. In bowl combine oil, lemon juice, onions, pepper and cumin then add beans and toss to coat. 4. Serve on a bed of lettuce then sprinkle with cheese. |
