This is my own take on Goulash that my mother used to make when I was growing up. What she made was only ground beef, onions, tomato juice and macaroni. I've dressed it up a little bit and it's something that I can make at a drop of the hat because I usually have all the ingredients on hand. Ingredients:
4 ounces macaroni (can use corn or rice pasta) |
1 lb lean ground beef |
2 garlic cloves, minced |
1 large onion, chopped |
1 (15 ounce) can tomato sauce |
1 (15 ounce) can chopped tomatoes |
1 (15 ounce) can black beans, drained and rinsed |
1 (4 ounce) can diced green chilies |
2 teaspoons chili powder |
2 teaspoons dried oregano |
1 teaspoon cumin |
3/4 teaspoon salt |
1/2 teaspoon cinnamon |
1/4 teaspoon cayenne pepper |
Directions:
1. Cook macaroni as directed on package. 2. While macaroni is cooking, brown ground beef, garlic, and onions in a large skillet sprayed with oil. 3. Drain. 4. When ground beef is cooked, add remaining ingredients and cook until heated through. 5. Serve with cheese and sour cream if desired. |
