This is my own take on Goulash that my mother used to make when I was growing up. What she made was only ground beef, onions, tomato juice and macaroni. I've dressed it up a little bit and it's something that I can make at a drop of the hat because I usually have all the ingredients on hand.
Ingredients:
4 ounces macaroni (can use corn or rice pasta)
1 lb lean ground beef
2 garlic cloves, minced
1 large onion, chopped
1 (15 ounce) can tomato sauce
1 (15 ounce) can chopped tomatoes
1 (15 ounce) can black beans, drained and rinsed
1 (4 ounce) can diced green chilies
2 teaspoons chili powder
2 teaspoons dried oregano
1 teaspoon cumin
3/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon cayenne pepper
Directions:
1. Cook macaroni as directed on package.
2. While macaroni is cooking, brown ground beef, garlic, and onions in a large skillet sprayed with oil.
3. Drain.
4. When ground beef is cooked, add remaining ingredients and cook until heated through.
5. Serve with cheese and sour cream if desired.
