Tex-mex Chicken With Chili Onion Rings |

Great tex-mex tacos with french fried onion rings heated in chili powder. Ingredients:
11/2lbs skinless,boneless chicken breast |
1/4c garlic-lime marinade |
1/4tsp ancho chili powder |
1/2tsp salt |
1/4tsp fresh ground pepper |
1(11oz)can mexicorn,rinsed,drained |
1/4c fire roasted salsa verde |
1/4 c diced red onion |
2tbs fresh,chopped cilantro |
1tbs fresh lime juice |
1/2c french-fried onion rings |
8 yellow and blue corn taco shells or reg. corn taco shells |
garnnish shreaded romaine lettuce |
Directions:
1. In a med. bowl,toss chicken with marinade,1/2tsp chili powder,salt and pepper 2. In a med. bowl,mix mexicorn,salsa verde,onion,cilantro and lime juice,tossing to combine. 3. Prepare an outdoor grill or heat stove-top grill pan over med. heat. Cook chicken 3-5 mins a side till cooked through. Remove from grill. 4. Meanwhile in a skillet over med heat,toss onion rings with remaining 1/4 tsp chili powde; heat,stirring until warm,about 3 mins. 5. Cut chicken into 1/2 pieces. Fill each taco shell with chicken,dividing evenly. Top each with 2 Tbs of the corn mixture and 2Tbs. of the onion ring mixture. Garnish with lettuce. |
