The best tortilla soup ever. And simple to make. 30 minutes of simmering is included in time. Ingredients:
1/2 cup chopped onion |
2 garlic cloves |
1 tablespoon oil |
4 cups chicken broth |
1 (8 ounce) can tomato sauce |
2 teaspoons ground cumin |
3 cups cubed cooked chicken |
3 medium zucchini, sliced |
1 (14 ounce) can tomatoes, with liquid |
1 (15 ounce) can whole kernel corn, drained |
1/2 cup salsa |
1 teaspoon salt |
3/4 teaspoon pepper |
Directions:
1. In a 4 quart soup kettle saute onion, garlic, in oil until tender. 2. Add the rest of the ingredients and bring to a boil. 3. Reduce heat, cover and simmer for 30 minutes. 4. Top individual servings with cheese and serve with tortilla chips or strips. |
