1 (8 ounce) can whole kernel corn, well drained |
1/4 cup chopped red pepper |
1/4 cup chopped green pepper |
6 pieces cooked bacon, crumbled |
1 ready-made 9-inch pie shell, baked as directed |
2 cups shredded cheddar cheese (8oz) |
4 large eggs |
1 cup whipping cream |
1 teaspoon chili powder |
shredded monterey jack cheese (optional) |
mild salsa (optional) |
Directions:
1. Preheat oven to 375 degrees. 2. Place corn, bellpepper, and bacon on the bottom of the crust and sprinkle with cheese. 3. Combine eggs, cream and chili powder and pour over ingredients in pie crust. 4. Bake for 25-30 minutes or until toothpick inserted in center comes out clean. 5. Sprinkle with monterey jack cheese, if desired. 6. Cool for 5 minutes before serving. 7. Serve with salsa if desired. |
