the serving size is the number of 6-inch cheese logs this recipe makes..they will keep very well in the refrigerator for 3 weeks...and they make nice gifts at the holidays. or they are nice to have made up for holiday drop in guests. 16-ounces light cream cheese ( neufchatel) softened |
12-ounces pepperjack cheese, shredded |
8-ounces sharp cheddar cheese, shredded |
1 can (4 ounces) chopped mild green chilies, drained well..... or substitute a hotter variety. |
1/2 teasp. chili powder |
1 jar ( 2 ounces ) chopped pimientos, drained well |
2 cups pecans, toasted, then chopped |
Directions:
1. on medium speed, beat all ingredients,... Except ...pecans until blended 2. on plastic wrap, roll mixture into six 6-inch long logs 3. wrap and refrigerate over night 4. unwrap, roll in pecans to coat 5. wrap in clean plastic wrap and refrigerate... 6. ................................................................... 7. if you are going to give as gifts: 8. ideas.. 9. wrap in colored plastic wrap and tie the ends with regular ribbon or with the curling ribbon |
