the serving size is the number of 6-inch cheese logs this recipe makes..they will keep very well in the refrigerator for 3 weeks...and they make nice gifts at the holidays. or they are nice to have made up for holiday drop in guests. Ingredients:
16-ounces light cream cheese ( neufchatel) softened
12-ounces pepperjack cheese, shredded
8-ounces sharp cheddar cheese, shredded
1 can (4 ounces) chopped mild green chilies, drained well..... or substitute a hotter variety.
1/2 teasp. chili powder
1 jar ( 2 ounces ) chopped pimientos, drained well
2 cups pecans, toasted, then chopped
Directions:
1. on medium speed, beat all ingredients,... Except ...pecans until blended
2. on plastic wrap, roll mixture into six 6-inch long logs
3. wrap and refrigerate over night
4. unwrap, roll in pecans to coat
5. wrap in clean plastic wrap and refrigerate...
