A comfort food that will warm your heart and your tummy. I think this would even be good cold in the summer. Ingredients:

land o lakes® butter or blend 1 ounce |
chopped green bell pepper 3 ounce |
sliced green onions 1 1/2 ounce |
chili powder 2 1/2 teaspoon |
ground cumin 1 1/2 teaspoon |
milk 3 to 4 cup |
land o lakes® white golden velvet® process cheese spread 5 pounds |
canned tomatoes, drained, chopped 9 ounce |
canned kidney beans, drained 9 ounce |
whole kernel corn 9 ounce |
hot pepper sauce 1/4 teaspoon |
Directions:
1. Melt butter in stockpot until sizzling. 2. Sauté bell pepper, green onions, chili powder and cumin until peppers are crisply tender. 3. Add 3 cups milk, diced White Golden Velvet® and all remaining ingredients. 4. Continue cooking, stirring frequently, until cheese is completely melted. 5. Heat soup to 160ºF and serve. 6. *Use remaining 1 cup milk to adjust consistency if necessary. |
