This scrumptious fruit fixes are under 75 calories. I found these recipes in Family Circle magazine. I have not tried these recipes, but I'm posting them for safe keeping. Ingredients:
1 1/2 lbs plums (7 med) |
1/2 cup sugar |
1 1/2 lbs ripe peaches (6 med) |
1/2-1 cup ginger ale |
2 lbs granny smith apples (5 med) |
1/4 cup raisins |
1 dash cinnamon |
2 tablespoons sugar |
1 tablespoon finely chopped pecans |
Directions:
1. Plum Perfect: Wash and dry plums. Cut each into eighths, discarding pits. Place in large (10-cup) microwave-safe bowl; sprinkle with sugar; toss. Microwave, uncovered, on high, 5 minutes. Stir. Microwave for 15 more minutes until jamlike. Makes 2 cups. 2. Peach-Y Keen: Wash and dry peaches. Cut into eighths, discarding pits. Place in large microwave-safe bowl. If peaches are very ripe, add 1/2 cup ginger ale; otherwise, add 1 cup. Microwave, uncovered, on High, 20 minutes or until jamlike, stirring halfway through. Makes 2 cups. 3. Hot Apple Pie: Wash, dry apples. Peel, core and cut into eighths. Place in large microwave-safe bowl. Add raisins, cinnamon and sugar; toss. Microwave, uncovered, on High, 20 minutes or until thick, stirring halfway through. Sprinkle with pecans. Makes 2 cups. |
