Teriyaki Pork Tenderloin

Ingredients:
1/4 cup low sodium soy sauce
2 tablespoons firmly packed dark brown sugar
2 tablespoons dry sherry
2 tablespoons rice vinegar
2 garlic cloves, minced
1 teaspoon finely grated fresh ginger
1/4 teaspoon red pepper flakes
1 1/4 lbs pork tenderloin, trimmed of all visible fat and silverskin
Directions:
1. The sauce: combine all sauce ingredients in a small bowl, stirring until the sugar dissolves.
2. Put the teriyaki sauce and pork in a sealable plastic bag.
3. Seal the bag and marinate the pork in the refrigerator, turning once, for at least 30 minutes to 4 hours.
4. Preheat the broiler.
5. Remove the pork from the marinade and discard the marinade.
6. Place the pork on a roasting pan and broil until an instant-read meat thermometer inserted into the thickest part reads 155°, about 15 minutes, turning once.
7. Let rest for 10 minutes before slicing.
