This is a Turkish recipe that my friend Valerie was taught by her husband. Ingredients:
2 -3 tablespoons cooked rice |
1 1/2 lbs ground beef |
1/2 large onion, finely minced |
2 teaspoons salt |
1/2 teaspoon pepper |
1 ounce parsley |
2 cups water, salted |
1 tablespoon margarine |
2 egg yolks |
1 lemon, juice of |
Directions:
1. Mix cooked rice, ground beef, onion, salt, pepper, and parsley. 2. Knead for 5 minutes. 3. Roll the mixture into small walnut size balls. 4. Boil 2 to 2 1/2 cups of salted water with margarine. 5. Drop meatballs into it. 6. Cover and cook on medium heat for 20 to 30 minutes or until the meatballs are done. 7. In a small bowl beat the 2 egg yolks, or one whole egg, with lemon juice. Slowly add 1/2 cup of the boiling meat stock. 8. Add to saucepan. 9. Cook for 2 to 3 more minutes. 10. Turn off heat. 11. Mix well and serve. |
