A zing to your shrimp ceviche. Use the best quality tequila you can find, and ofcourse do not skimp on it. Ingredients:
2 lbs medium raw shrimp, cleaned and chopped to a mediumdice |
3 large tomatoes, diced |
6 limes, juiced |
4 lemons, juiced |
1 cup cilantro leaves, chopped |
1 serrano chile, seeded and finely chopped |
2 cucumbers sliced into 1/2 to 1inch thick slices |
1 red onion, diced (optional) |
3 crushed garlic cloves |
1/4 cup tequila |
lots of salt and pepper |
Directions:
1. Marinade all ingredients except the Cucumber slices, and only use 1/2 of the cilantro in the marinade. 2. Place marinade in fridge for 3-4 hours. 3. Remove and serve on cucumber slices, garnish with remaining cilantro. 4. Recommended beverage: Corona well chilled, or any Mexican beer. |
