These are great tasting and super easy! Everyone will rave over them, and never know how easy it was!! I also use this for quesedillas - chop everything a little smaller, place a tortilla in the foreman grill, cover with cheese, add filling, cover filling with cheese, add a tortilla on top, and grill for a couple of minutes! olive oil |
1 t margarine |
2-3 lbs bonesless, skinless chicken, cut into strips |
1 large onion, cut ito strips |
1 red pepper, julienned |
1 yellow pepper, julienned |
1 small can green chiles |
2 t. chopped garlic |
2 t. chili powder |
1 t. cumin |
seasoned salt |
garlic pepper |
1/4 t. cayenne pepper |
1 t. dried clinatro |
1/2 lime |
1 oz tequila (optional) |
6 roma tomatoes, sliced lengthwise |
flour tortillas |
garnishes: sliced jalepeno, sliced black olives, shredded mexican flavor cheese, sour cream, shredded lettuce, salsa, guacamole, and tortilla chips |
Directions:
1. Drizzle extra virgin olive oil in large skillet 2. Add margarine 3. When margarine melts add chicken, onion, peppers, chiles, garlic, and seasonings - including Tequila if using (except lime). 4. When chicken is almost done, add tomatoes 5. Squeeze lime over all 6. Cook about 10 minutes longer on low 7. Serve with Spanish Rice and garnishes |
