Ingredients:
4 eggs, lightly beaten |
2 cups sugar |
1 tablespoon all-purpose flour |
1 tablespoon cornmeal |
1/4 cup milk |
1/4 cup butter or margarine, melted |
2 teaspoons grated lemon rind |
1/4 cup lemon juice |
1 unbaked (9-inch) pastry shell |
Directions:
1. Combine eggs and sugar; beat well. Add flour and cornmeal, mixing until well blended. Add milk, butter, lemon rind, and juice; beat well. Pour filling into pastry shell. Bake at 375° for 55 minutes or until a knife inserted in center comes out clean. Cool before slicing. |
