A different take on an old classic. Ingredients:
1 lemon, juice of |
1/4 cup olive oil |
1/4 cup soy sauce |
1 teaspoon dried oregano |
3 garlic cloves, crushed |
4 lbs pork tenderloin, cut into 1 inch cubes |
2 medium yellow onions, cut into 1 inch pieces |
2 green bell peppers, cut into 1 inch pieces |

Directions:
1. In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic. 2. Add pork, onions, and green peppers; stir to coat. 3. Cover, and refrigerate for 2 to 3 hours. 4. Preheat grill for medium-high heat. 5. Thread pork, peppers, and onions onto skewers. 6. Lightly oil grate. 7. Cook for 10 to 15 minutes. |
