4 beef tenderloin steaks (1-inch thick) |
2 tablespoons softened cream cheese |
4 teaspoons blue cheese, crumbled |
4 teaspoons plain yogurt |
2 teaspoons minced onions |
1 dash pepper |
1 clove garlic, halved |
1/2 teaspoon salt, divided |
2 teaspoons freshly chopped parsley |
Directions:
1. Combine cream cheese, blue cheese, yogurt, onion and pepper; reserve. 2. Rub each side of beef steaks with garlic. 3. Place steaks on rack in broiler pan so surface of meat is 2 to 3 inches from heat. 4. Broil 5 to 6 minutes. 5. Season with salt. 6. Turn and broil 3 to 4 minutes. 7. Season with remaining salt. 8. Top each steak with an equal amount of reserved cheese mixture. 9. Broil an additional 1 to 2 minutes. 10. Garnish with parsley. |
