excellent recipe to be served with the pesto-olive chicken. Very easy with outstanding flavor! Ingredients:
3 lbs small red potatoes, quartered |
2 tablespoons canola oil |
1/3 cup prepared horseradish |
1/4 cup whole grain mustard |
2 tablespoons butter, melted |
Directions:
1. In a large bowl, toss potatoes with oil. Place potatoes on greased baking sheet, in single layer. 2. Bake at 400 degrees for 30 minutes. 3. Meanwhile in a small bowl combine the horseradish, mustard and butter. 4. Spoon over potatoes and toss to coat. 5. Bake 5 - 7 minutes longer or until tender. |
