TENDER GREENS WITH NUTMEG AND CREAM This recipe came from an estate sale. I obtained it when I purchased the family collection from the Navarro Estate in Terrell, Texas in 1990. Ingredients:
2 tablespoons butter |
3 medium shallots minced |
2 pounds tender greens cleaned stemmed with water left clinging to leaves |
1/2 cup cream |
1/4 teaspoon ground nutmeg |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Heat butter in a large sauté pan. 2. Add shallots and sauté over medium high heat for 3 minutes. 3. Add wet greens then cover and cook stirring occasionally until completely wilted but still bright. 4. Uncover and cook until most of liquid evaporates. 5. Add cream and cook uncovered until thickened slightly. 6. Stir in nutmeg then season with salt and pepper. |
