This recipe takes a cheaper eye of round beef cut that is traditionally tough and chewy and turns it into tender bliss. Ingredients:
eye of round beef roast (3 lbs) |
salt |
pepper |
garlic |
additional seasonings |
Directions:
1. Slice a few cloves of garlic into pieces. Make slits all around the meat and insert the garlic pieces into the slices on the beef. 2. Season roast with salt, pepper, and any other seasonings you desire. 3. Place roast in roasting pan or baking dish. Do not cover or add liquid. Place in 500 degree oven and then immediately turn the heat down to 475 degrees. 4. Roast at 475 for 7 mins per pound. So with a 3lb roast: 21 minutes. 5. After that, turn oven off and let roast sit in oven for 2.5 hours. Do NOT open the door during this time. 6. Remove roast, rest, carve, devour. |
