An appetizer or a main course - Lamb is always a popular dish at Easter and these broiled lamb chops are melt-in-your-mouth good!! A marinade with evaporated milk, lemon juice and garlic tenderizes the meat, a savoury rub is the finishing touch. Ingredients:

1 cup carnation skim milk (2% or fat-free) |
1/4 cup lemon juice or 1/4 cup vinegar |
1 garlic clove, minced |
8 lamb rib chops, trimmed (about 1 1/2 lb) |
1 tablespoon smoked paprika |
1 tablespoon brown sugar |
1 teaspoon garlic powder |
1 teaspoon dried oregano |
1 teaspoon salt |
Directions:
1. MARINADE: Combine evaporated milk, lemon juice and garlic in a medium bowl. Place lamb chops in marinade, cover and refrigerate for 1-4 hours. Remove lamb from marinade. Wipe off excess marinade. Discard all leftover marinade. 2. SPICE RUB: Combine all ingredients for spice rub. Sprinkle chops with prepared rub. 3. Preheat broiler. Place lamb chops on a lightly greased broiler pan, 4-5 inches from heat, turning over once, for medium rare, 6-7 minutes in total. |
