Different way to get veggies into the kids..Grown ups like them too. Ingredients:
3/4 cup cornstarch |
1/2 cup self rising flour |
1/4 tsp. pepper |
1/2 cup water |
1 large egg, beaten |
2 med. zucchini |
1 med. onion |
2 yellow squash |
veg. oil |
1/2 tsp. salt |
Directions:
1. Mix 1st 3 ingredients in a large bowl. 2. Add water and egg and mix until smooth. 3. Cut veggies into 1/4 inch pieces. 4. Pour oil into heavy pan and heat to 375 or put the end of a wooden spoon in the oil and if the oil bubbles up around it, the oil is ready. 5. Dip veggies into batter. 6. Fry in batches about 4 minutes or until golden brown. 7. Drain on paper towels. 8. Sprinkle with salt. |
