TEMPT ME GREEN TOMATO PIE This recipe came from my Aunt Minnie who is a fabulous cook. She is 89 years old and still makes this pie for us when we visit. Of course anything out of her kitchen is a real treat. Read more Ingredients:
6 medium green tomatoes |
1 cup sugar |
3 tablespoons flour |
1-1/4 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/8 teaspoon ground cloves |
1-1/2 teaspoons lemon zest |
1/2 teaspoon salt |
2 tablespoons unsalted butter |
homemade pastry for a 2 crust pie |
Directions:
1. Preheat oven to 400. 2. Blanch tomatoes in boiling water for 20 seconds. 3. Remove from water then core and peel. 4. Cut tomatoes into 1/4 slices. 5. In large saucepan combine tomatoes with 1/4 cup water. 6. Bring to a boil then cover and reduce heat and simmer 5 minutes. 7. Remove tomatoes from liquid with a slotted spoon reserving boiling liquid. 8. Combine flour, sugar, salt, cinnamon, nutmeg, cloves and lemon zest. 9. Add flour mixture to liquid. 10. Cook stirring constantly just until boiling. 11. Remove from heat and stir in butter until melted. 12. Gently stir in prepared green tomato slices. 13. Cool slightly for 15 minutes and spoon into unbaked pie crust. 14. Top with top pastry crust then crimp and seal edges. 15. Cut slits in tops and sprinkle lightly with sugar and bake for 40 minutes. |
