This is a nice side with fish or sautéed chicken for dinner, or with a sandwich at lunchtime. I add a little cayenne pepper for kick. Ingredients:
1/4 cup jicama, julienned |
1/4 cup carrot, julienned |
1/4 cup chayote or zucchini squash, julienned |
1/4 cup red onion, julienned |
1/4 cup red pepper, julienned |
1 cup red cabbage, julienned |
favorite blue cheese dressing |
Directions:
1. Mix prepared veggies in a bowl. 2. Add blue cheese dressing a little at a time to desired consistency (go light - the dressing has a lot of flavor) |
