Excellent! From Southern Living Magazine. Can use fresh or frozen corn. Ingredients:
1/4 cup sugar |
3 tablespoons flour |
2 teaspoons baking powder |
1 1/2 teaspoons salt |
6 large eggs |
2 cups whipping cream |
1/2 cup butter or 1/2 cup margarine, melted |
6 cups corn |
Directions:
1. Combine first 4 ingredients. 2. Whisk together eggs, whipping cream and butter. Gradually add sugar mixture, whisking until smooth; stir in corn. 3. Pour mixture into a lightly greased 13 x 9 baking dish. 4. Bake at 350 for 50 minutes or more until deep golden and set. 5. Let pudding stand 5 minutes. |
