Ingredients:
1/2 cup butter or margarine, softened
1 cup sugar
2 eggs, separated
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 cup milk
1/2 teaspoon vanilla extract
powdered sugar
Directions:
1. Cream butter in a medium mixing bowl; gradually add sugar, beating well. Add egg yolks; beat well.
2. Combine flour and baking powder; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Stir in vanilla
3. Beat egg whites (at room temperature) until stiff peaks form. Gently fold into batter. Spoon 1 teaspoon batter into each greased miniature muffin pan. Bake at 350° for 12 minutes or until lightly browned. Cool in pans 10 minutes; remove to wire racks, and cool completely. Sift powdered sugar over tops of muffins.
