Goes well with dim sum Ingredients:
6 eggs |
3 1/2 cups cold water |
1 tsp. salt |
2 tbs.soy sauce |
1/2 cup, brewed black tea |
2 star anise- broken into individual pieces |
1 cinnamon stick |
Directions:
1. Place eggs in the pan with the water-make sure the water covers the eggs by aleast 1/2 2. cover and bring to a rolling boil 3. remove pan and let stand in the hot water for 20 minutes 4. remove eggs and run under cold water to cool enough for you to handle. reserve cooking water 5. tap the hard boiled eggs,gently,with the back of a spoon to make cracks all ove the eggs 6. bring water back to a boil, add salt,soy,tea,anise, cinnamon and the eggs 7. simmer,stirring occasionally for 2 hours 8. turn off heat and let eggs sit till you serve. 9. can serve a honey mustard or any other condiment you please |
