Taverna Style Grilled Lamb |

This quick and easy recipe has the flavors of the tavernas lining the streets of the towns of Greece. Enjoy! Ingredients:
1 lb lamb, diced |
2 tablespoons fresh oregano, chopped |
1 tablespoon fresh rosemary, chopped |
1 lemon, zest of |
2 tablespoons olive oil |
salt & freshly ground black pepper, to taste |
7 ounces feta cheese, sliced |
1 tablespoon fresh oregano, chopped |
2 tablespoons fresh parsley, chopped |
1 lemon, zest of |
1 lemon, juice of |
1/2 small red onion, finely sliced |
3 tablespoons olive oil |
Directions:
1. Mix together the marinade ingredients and add the lamb cubes. Toss well and then skewer meat onto 4 metal skewers (broiler) or 4 wet wooden skewers (open fire). 2. Arrange the sliced feta on a large serving dish and sprinkle over the herbs, lemon zest and sliced onion. Drizzle over the lemon juice and olive oil and season with salt and pepper. 3. Cook the lamb skewers under a preheated hot broiler for about 6-8 minutes, turning frequently, until browned and almost cooked through. Do the same for an open fire. Remove from heat and leave to rest for 1-2 minutes. 4. Serve the lamb with the salad along with plenty of crusty bread, if desired. |
