I got this from an old issue of Quick Cooking. This is basically scrambled eggs with Tater Tots and ham. Definitely quick and easy. Ingredients:
2 1/2 cups frozen tater tots |
1 cup chopped cooked ham |
1/4 cup chopped onion |
1/4 cup chopped green pepper |
2 tablespoons vegetable oil |
4 eggs, beaten |
salt and pepper |
Directions:
1. In a large skillet, cook potatoes, ham, onion, and green pepper in oil over medium heat for 8-10 minutes or until browned, stirring constantly while breaking up the Tater Tots. 2. Add eggs. 3. Cook and stir until eggs are completely set. 4. Season with salt and pepper. |
