Just a simple toss. Great for the summer! I make mine the day before and let it sit in the fridge over night. Letting the mayo mix sit for 1 hour makes a great difference in the flavor! Cooking time is chilling time only! Ingredients:
4 cups cubed cooked potatoes |
10 slices bacon |
1/2 cup sliced green onion |
1/2 cup finely chopped onion |
1/2 cup diced green bell pepper |
1/2 cup mayonnaise |
1 tablespoon apple cider vinegar |
1/2 teaspoon kosher salt |
1/8 teaspoon white pepper, freshly ground |
Directions:
1. Cut the bacon in fine strips and heat in pan, until crisp. 2. Drain the fat and let cool on paper towels. 3. Mix mayo, vinegar, salt, pepper, onions, green onions, bell pepper and bacon and let sit for 1 hour in the fridge. 4. Add the potato cubes and mix everything well. 5. Let sit in fridge for 1 hour or more, at least until well chilled. |
