My grandmother gave me this recipe, she said they used it to stretch meals during the depression. A few potatoes could feed a tableful of people. I take a short cut by using the tube biscuits. Ingredients:
4 potatoes, peeled and diced |
water |
milk |
1 stick of butter or margarine |
salt and pepper |
3 cans of tube biscuits |
Directions:
1. Cover potatoes with water in a Dutch oven and cook until soft. 2. Mash part of the potatoes with a potato masher. 3. Add milk until you have the pot about 3/4 full. 4. Add butter, salt and pepper to taste, and bring to a gentle boil. 5. Cut biscuits into fourths and drop into the broth, stir well. 6. Reduce heat to a simmer. 7. Cover and cook for 10 minutes. |
