Simple, simply spiced tenderloin which takes less than 30 minutes to cook and tastes like you've been in the kitchen all day.
Ingredients:
2 lbs pork tenderloin
4 tablespoons olive oil
2 tablespoons malt vinegar
1 1/2 tablespoons salt
1 tablespoon black pepper
2 tablespoons paprika
2 tablespoons coriander
2 tablespoons thyme
2 tablespoons rosemary
1 tablespoon cayenne
2 tablespoons butter
Directions:
1. Preheat oven to 500 degrees.
2. Use 2 T of olive oil to coat oven-proof pan.
3. Combine remaining olive oil and malt vinegar. Drizzle on tenderloin.
4. Combine spices and herbs. Press into tenderloin on all sides.
5. Roast tenderloin (uncovered) 15 minutes.
6. Remove from oven.
7. Rub about butter along length of tenderloin, let set for 5 minutes to set juices.
8. Slice and serve.
