Tasty Tortilla Breakfast Sandwich |

This is an easy thing to fix if you're in a hurry but still want something tasty and healthy for breakfast. You can be flexible with the fillings. I used eggs, American cheese, chopped onion, ham and tomato. This is baked in the oven and turns out to be like a Hot Pocket, but it is much better for you. You can also make a bunch of these ahead of time and freeze. Then to reheat, just pop in the microwave for a minute. Ingredients:
2 (10 inch) tomato-basil tortillas or 2 (10 inch) flour tortillas |
2 eggs, cooked to scrambled (pan or microwave) |
2 slices deli ham |
1 small onion, chopped |
1 small tomato, chopped |
2 slices american cheese or 2 slices cheddar cheese |
nonstick cooking spray |
Directions:
1. -Preheat oven to 375. 2. -Treat sheet pan with nonstick cooking spray. 3. -Microwave tortillas for 20 seconds each (ovens vary). 4. -Put fillings in the middle; any order you choose. 5. -Roll up egg roll-style. 6. -Put seam-side down on sheet pan. 7. -Bake for 15 minutes. 8. -Let rest for 2 minutes. 9. -Eat whole, or cut in half and enjoy. |
