Another interesting dish from a tomato puree can. Ingredients:
1 tablespoon oil |
2 garlic cloves, crushed |
1 teaspoon lemongrass, finely chopped |
1 teaspoon ginger, finely chopped |
500 g prawns, cleaned |
2 teaspoons honey |
1/2 cup chopped spring onion |
1 lemon, juice of |
415 g tomato puree |
1 cup coconut milk |
2 tablespoons coriander, chopped |
Directions:
1. Heat oil in saucepan. 2. Add garlic, lemon grass, ginger and spring onions and cook until soft. 3. Add prawns and cook 2 minutes. 4. Add honey, lemon juice and tomato puree. Simmer 5 minutes. 5. Add coconut milk and coriander. 6. Serve over prepared rice. |
