Tasty Tarragon Salad Dressing |

Traveling through the South of France so many years ago, I came across this amazing salad dressing at almost every restaurant, I still make it today - it's light and goes with all sorts of salads. Fantastic to use over Tuna fish and as a condiment to baked fish such as salmon. Ingredients:
1 cup olive oil |
1/2 cup apple cider vinegar |
2 tables finely chopped tarragon or 1 tablespoon dried |
2 tablespoons honey |
2 cloves garlic finely minced |
1 tablespoon dijon mustard (use grainy one if you like - looks great) |
2 tablespoon mayonnaise |
1/2 teaspoon dry mustard |
3/4 teaspoon kosher salt |
1/2 teaspoon fresh ground cracked pepper |
equipment needed: bowl, whisk & container with tight lid |
Directions:
1. In bowl, place fresh chopped tarragon, minced garlic, honey, mustard(s), mayonnaise, salt & pepper. 2. Still till well combined. 3. Add vinegar and stir till well combined. 4. Add oil slowly in a stream while still whisking to make an emulsion. 5. Salad dressing is finished! 6. To make a lighter version , use half the oil and add water instead and mix it up in your blender. |
