Quick easy and simple rustic spread made from oilves, capers and anchovies. Ideal as a starter or a tasty snack for anytime. Serve with warm bread. Ingredients:
300 g pitted black olives |
6 anchovy fillets |
4 tablespoons capers |
1 garlic clove, chopped |
100 ml olive oil |
1 tablespoon lemon juice |
2 teaspoons dijon mustard |
2 teaspoons tomato puree |
1 teaspoon chopped fresh thyme |
1 tablespoon of fresh flat leaf parsley |
salt and pepper |
Directions:
1. Place all the ingredients in a food processor and blend into a coarse paste. Taste and season with salt and pepper as required. Store in refrigerator. |
