Quick easy and simple rustic spread made from oilves, capers and anchovies. Ideal as a starter or a tasty snack for anytime. Serve with warm bread.
Ingredients:
300 g pitted black olives
6 anchovy fillets
4 tablespoons capers
1 garlic clove, chopped
100 ml olive oil
1 tablespoon lemon juice
2 teaspoons dijon mustard
2 teaspoons tomato puree
1 teaspoon chopped fresh thyme
1 tablespoon of fresh flat leaf parsley
salt and pepper
Directions:
1. Place all the ingredients in a food processor and blend into a coarse paste. Taste and season with salt and pepper as required. Store in refrigerator.
