Another favorite from the mid-Atlantic coastal area...from a local Church cookbook of family favorites. While the author, Ann Ellis, is no longer living, her great recipes live on! If using garden tomatoes, you will need 6 medium large ones. Ingredients:
4 tablespoons butter, melted |
1 cup fresh breadcrumb |
1 small onion, minced |
2 1/2 cups tomatoes, fresh, peeled, chopped or 1 (28 ounce) can tomatoes, cut-up |
2 teaspoons basil |
4 tablespoons sugar |
salt |
pepper |
1/2 cup grated cheese |
1/2 cup dry breadcrumbs |
Directions:
1. Preheat oven to 350 degrees. 2. Brown fresh bread crumbs and minced onion in butter. 3. In a medium bowl, combine the browned onion and bread crumb mixture with the tomatoes, basil, and sugar. Add salt and pepper to taste. Mix well. 4. Pour tomato mixture into a greased baking dish. Top with grated cheese and dry bread crumbs. 5. Bake at 350 degrees for 30-40 minutes depending on your oven. |
