Tasty Pumpkin Bread (Lightened Version)

Delicious plain or with butter or cream cheese. For a fancy presentation, top with a dollop of cool whip.
Ingredients:
2 eggs
4 egg whites
2 cups canned pumpkin
1 cup unsweetened applesauce
2/3 cup cold water
3 cups all-purpose flour
1 cup whole wheat flour
1/2 cup flax seed
1 tablespoon baking soda
2 teaspoons cinnamon
1 teaspoon nutmeg
2 cups splenda brown sugar blend
1 1/2 teaspoons salt
Directions:
1. Preheat oven to 350.
2. Mix first five ingredients (wet) in a large bowl and set aside. Sift and mix remaining ingredients (dry) in another bowl.
3. Gently add the dry ingredients into the wet in four or five segments. Mix until combined but do not overmix.
4. Line two large loaf pans with parchment. Divide batter evenly.
5. Bake at 350 for 1 hour.
