Makes a great store-cupboard dish. Serve with a crunchy coleslaw or green salad for a complete easy meal. Ingredients:
6 large potatoes |
25 g butter |
1 tablespoon milk |
salt and pepper |
2 tablespoons butter |
2 tablespoons plain flour |
1 cup milk |
1 (425 g) can tuna, drained & flaked (or smoked fish) |
1 tablespoon parsley, chopped |
2 hard-boiled eggs, chopped |
1/2 cup grated cheese, optional |
Directions:
1. Peel and boil the potatoes until cooked. 2. Mash with 1st measure of butter and milk, seasoning to taste. 3. While potatoes are cooking prepare filling. 4. Melt second measure of butter in saucepan and add flour. 5. Stir constantly. 6. Remove from the heat and slowly add in the milk, stirring all the time. 7. Return pan to the heat and keep stirring until sauce boils and thickens. 8. Remove from the heat and add in the fish, parsley and eggs. 9. Place half the mashed potatoes into a greased 20cm pie dish. 10. Pour in the filling and then top with the remaining potato. 11. Top with grated cheese if desired. 12. Cook in oven for 2o minutes at 190'C or until golden. |
